A FOOD TRADITION

Khorezmian Cuisine

Khorezmian cuisine is associated with the lower Amu Darya oasis and the historical Khorezm cultural region, including areas on both sides of the modern Uzbekistan–Turkmenistan border. It emphasizes rice, wheat flour, meat, dairy, pumpkin, carrots, herbs, and locally available riverine and desert-edge ingredients. Characteristic methods include steaming, boiling, baking, and cooking noodles or dumplings with pronounced herb and dairy elements. Commonly cited examples include shivit oshi, green dill noodles served with a topping; tukhum barak, egg-filled folded dough; and gumma, a fried or baked filled pastry. These foods are shared within a broader regional tradition and should not be treated as exclusively Uzbek inventions.
