A FOOD TRADITION

Kittitian cuisine

Kittitian cuisine is the food tradition of Saint Kitts, shaped by African-descended home cooking, plantation-era ingredients, British Caribbean influences and connections with neighboring islands. Everyday cooking commonly combines salted fish or meat with provisions such as yam, sweet potato, green banana and breadfruit, alongside rice, peas, vegetables and spicy sauces. Stewing, boiling, braising and open-fire cooking are characteristic techniques, with communal preparation especially important at festive gatherings. Recognizable examples include goat water, a richly seasoned goat stew; saltfish with dumplings and provisions; and Kittitian-style black pudding or blood sausage. Recipes vary by household and community and overlap substantially with other eastern Caribbean traditions.
