A FOOD TRADITION
Kivu Cuisine
Kivu cuisine develops around the highlands and lakes of eastern Democratic Republic of the Congo, with strong connections to neighboring Great Lakes foodways. Plantains, cassava, beans, potatoes, maize, sorghum, freshwater fish and leafy vegetables are common staples, while bananas and beer traditions also shape local meals. Boiling, frying, grilling, fermenting and banana-leaf steaming are widely used. Examples include matoke served with bean or meat sauce, sambaza, the small fried or stewed lake fish shared around the Great Lakes, and maboke-style fish cooked in leaves. The cuisine varies between lakeshore, highland and urban settings and is not exclusive to Kivu Province.
