A FOOD TRADITION

Kosraean Cuisine

Kosraean cuisine is rooted in the lush island of Kosrae, where abundant rainfall supports breadfruit, taro, yam, banana, coconut, and other garden crops alongside reef fish, crab, and pork. Traditional preparation emphasizes roasting, boiling, steaming in leaves, and cooking foods with coconut milk or cream. Breadfruit and taro provide substantial accompaniments, while fish and shellfish connect meals to the surrounding lagoon and reefs. Representative dishes include roasted breadfruit with coconut, taro cooked in coconut cream, and leaf-wrapped reef fish steamed over hot stones. Kosraean food shares broad Caroline Island techniques with Pohnpei and Chuuk but retains a distinct island context.
