A FOOD TRADITION
Kuchi Cuisine
Kuchi cuisine refers to the mobile and semi-mobile foodways of Afghan Pashtun and other nomadic communities, whose practices have historically crossed seasonal routes rather than following fixed provincial boundaries. Portability, shelf life, and efficient use of animals shape the repertoire: flatbreads, rice, milk, yogurt, clarified butter, dried meat, tea, and occasionally foraged or traded produce are prominent. Cooking favors griddles, simple pots, open fires, drying, and transforming dairy into durable products. Examples include bolani-style filled breads, qurut-based soups or sauces, and dried-meat stews served with bread or rice. Kuchi cooking overlaps with settled Afghan cuisines but reflects mobility, camp equipment, and seasonal exchange.
