A FOOD TRADITION
Lakeshore Malawian cuisine
Lakeshore Malawian cuisine describes the foodways of communities around Lake Malawi and connected river systems, where fishing, drying and trading fish strongly shape meals. Chambo, usipa, kampango and other local fish may be fried, smoked, dried or simmered into relishes, and are commonly served with nsima, cassava, rice or vegetables. Representative foods include chambo with nsima and tomato relish, dried usipa cooked with greens or groundnuts, and rice served with smoked fish stew. This is an ecological and cultural tradition shared by Chewa, Yao, Tonga, Nkhonde and other communities, not a single ethnic or exclusive regional cuisine.
