A FOOD TRADITION

Latgalian Cuisine

Latgalian cuisine comes from Latgale in eastern Latvia, a culturally distinctive region shaped by Catholic traditions and long contact with Belarusian, Polish, Russian, and Lithuanian communities. Its cooking favors potatoes, buckwheat, barley, rye, pork, mushrooms, dairy, forest berries, and preserved foods. Characteristic techniques include baking dense breads and pies, simmering porridges and soups, fermenting or souring grains, and preserving meat, fish, and produce for winter. Recognizable examples include guļbešņīki, potato dumplings often served with a savory topping; skābputra, a soured grain porridge; and kūča, a traditional Christmas preparation of cooked grains with seeds, honey, or other additions. These foods overlap with Latvian cooking but express Latgale's particular regional heritage.
