A FOOD TRADITION

Lenca Cuisine

Lenca cuisine is associated with Indigenous communities in the western and central Honduran highlands and with related traditions extending across the Salvadoran border. Maize, beans, squash, seasonal greens, herbs, and locally raised poultry or pork form its practical foundation. Characteristic methods include nixtamalizing and stone-grinding maize, cooking on a comal, wrapping foods in leaves for steaming, and preparing substantial soups over wood fires. Frequently associated examples include ticucos, maize parcels filled with beans or other savory mixtures; atol chuco, a fermented or sour maize preparation; and tamales de frijol. Local variation is considerable, and many foods also circulate within broader Honduran rural cooking.
