A FOOD TRADITION
Lezgin Cuisine
Lezgin cuisine is an ethnocultural tradition practiced by Lezgin communities in northern Azerbaijan and southern Dagestan, making it inherently cross-border. Its foundation includes wheat and maize products, lamb, beef, poultry, dairy, seasonal greens, beans, onions, and orchard fruits. Dough work, hearth baking, boiling, and slow simmering are especially important, with foods suited to mountain villages and pastoral households. Representative dishes include kurze, filled dumplings; afarar, thin herb-filled flatbreads; and Lezgin varieties of meat, bean, or grain soups. Local versions differ by village and religious community, and many preparations overlap with neighboring North Caucasian cuisines rather than forming an isolated national canon.
