A FOOD TRADITION

Lhotshampa Cuisine

Lhotshampa cuisine is associated with Bhutan’s southern Nepali-speaking communities, whose foodways combine local Bhutanese ingredients with traditions maintained by families of Nepali cultural heritage. Rice is central, accompanied by lentils, seasonal vegetables, greens, pickles and spiced meat preparations. Fermentation and preservation are important, especially for leafy vegetables and radish, while beaten rice and flour-based snacks appear in festive cooking. Common examples include dal bhat-style meals, gundruk, a fermented leafy-green preparation, sel roti, and vegetable or meat tarkari. These foods are also part of wider Himalayan and South Asian traditions, but their household practice in southern Bhutan merits separate catalogue recognition.
