A FOOD TRADITION

Limburgian Cuisine

Limburgian cuisine reflects the southeastern Netherlands and its long-standing cultural links with Belgian Limburg, Wallonia and the Rhineland. It combines orchard fruit, asparagus, rye and wheat baking, pork, poultry, rabbit, freshwater fish and strongly seasoned sauces. Slow braising, souring, fruit preservation and substantial pastry-making are characteristic techniques. Examples include zoervleis or zuurvlees, a sweet-sour braised meat dish; Limburgse vlaai, a yeast tart with fruit or rice filling; and nonnevotten, twisted fried pastries associated especially with carnival. The cuisine is often described as convivial and borderland in character, with local expressions varying across the province and shared traditions extending beyond Dutch borders.
