A FOOD TRADITION
Litvak Cuisine
Litvak cuisine represents the Jewish foodways of Lithuania, Belarus, northeastern Poland, and neighboring parts of the former Russian Empire. In Belarus, it developed through urban and rural Jewish communities and adapted to local grains, potatoes, cabbage, freshwater fish, mushrooms, beets, and dairy, while observing Jewish culinary practice. Slow cooking, pickling, baking, rendering schmaltz, and preparing food for the Sabbath and festivals are central techniques. Representative dishes include potato or noodle kugel, gefilte fish in the Litvak style, and cholent; buckwheat-based dishes, stuffed cabbage, and rye breads also occupy an important place. This is a regional Jewish tradition with substantial internal and cross-border variation, not an exclusive Belarusian national cuisine.
