A FOOD TRADITION
Manding Cuisine
Manding cuisine spans western and southern Mali and neighboring parts of Guinea, Senegal, Côte d’Ivoire, and Burkina Faso, with local variation among Mandinka, Bambara, and related communities. Staples include millet, fonio, rice, maize, cassava, cowpeas, groundnuts, okra, leafy greens, and dried or fresh fish. Grains are steamed, boiled, pounded, or formed into firm porridges, while sauces are slowly simmered and commonly enriched with groundnut paste, onions, or baobab leaves. Recognizable examples include tô with groundnut or leafy sauce, tigadèguèna (groundnut stew), and fonio preparations such as steamed fonio with vegetable or meat sauce. Communal sharing and seasonal grain storage are important features.
