A FOOD TRADITION

Mapuche Cuisine

Mapuche cuisine is rooted in south-central Chile, especially Wallmapu, and reflects Indigenous foodways shared across the Chile–Argentina border. It emphasizes locally gathered plants, maize, potatoes, beans, wheat, squash, and the piñón nuts of the pewen tree, alongside pork, poultry, and freshwater or coastal foods in different areas. Boiling, roasting, grinding, fermentation, and cooking on hot stones are characteristic techniques. Well-known examples include catuto, a ground-wheat preparation; muday, a fermented grain or fruit beverage; and dishes based on boiled or toasted piñones. Seasonal gathering and communal preparation remain important cultural features.
