A FOOD TRADITION

Matsu Cuisine

Matsu cuisine is the island food culture of Taiwan-administered Matsu, closely related to Fuzhou and other coastal Fujian traditions while shaped by the archipelago’s military history, limited farmland, and strong reliance on the sea. Seafood, rice, sweet potatoes, wheat products, fermented foods, and locally made rice wine are recurring foundations. Fish is minced, dried, simmered, or incorporated into noodles and cakes; red yeast and wine are used in marinades, braises, and celebratory cooking. Recognizable examples include Matsu fish-noodle soup, red-yeast chicken, and fish dumplings or fish cakes. These practices are part of a wider cross-strait coastal tradition rather than an exclusive Matsu invention.
