A FOOD TRADITION

Mbochi Cuisine

Mbochi cuisine is associated with Mbochi-speaking communities in northern and central parts of the Republic of the Congo, particularly along major river systems and forest margins. Cassava, plantains, maize, yams, peanuts, leafy vegetables, freshwater fish, and seasonal forest products provide the culinary foundation. Fish is frequently smoked, grilled, boiled, or wrapped in leaves, while cassava is fermented into dough, pounded into a staple, or served as chikwangue. Representative foods include maboke-style river fish, cassava-leaf stews with smoked fish, and fufu or chikwangue accompanied by peanut or vegetable sauces. Northern versions also reflect access to forest ingredients and riverine fishing, distinguishing them from coastal cooking.
