A FOOD TRADITION

Megrelian Cuisine

Megrelian cuisine comes from Samegrelo in western Georgia and is known for assertive seasoning, abundant walnuts, maize, dairy, and aromatic herbs. Its cooking often uses adjika, ground marigold, garlic, and chili to build layered sauces, while cornmeal and cheese remain important everyday foods. Poultry, meat, beans, and vegetables are commonly braised or served with richly seasoned walnut preparations. Familiar examples include elarji, a stretchy cornmeal-and-cheese dish; gebzhalia, cheese with a minty sauce; and kharcho, a spiced walnut-and-meat stew or sauce. Megrelian traditions overlap with neighboring western Georgian cuisines and should not be treated as wholly separate from the wider Georgian culinary heritage.
