A FOOD TRADITION
Moravian Cuisine
Moravian cuisine reflects the varied foodways of eastern Czechia, shaped by agricultural villages, wine-growing districts, and long contact with Austria, Slovakia, and Hungary. Common foundations include potatoes, cabbage, legumes, mushrooms, pork, poultry, orchard fruit, poppy seeds, and yeast doughs. Soups, baked casseroles, filled dumplings, fruit dumplings, and festive pastries are prominent, with regional differences between southern vineyards, central plains, and the foothills. Recognizable examples include kyselica, a sour cabbage soup; frgál, a large Moravian yeast pastry with fruit, cheese, or poppy filling; and švestkové knedlíky, plum-filled dumplings. Moravian wine and fruit distillates also form part of the region’s broader culinary culture.
