A FOOD TRADITION

Mountain Jewish Cuisine

Mountain Jewish cuisine refers to the foodways of Juhuro, or Mountain Jewish, communities historically settled in northern Azerbaijan and neighboring Dagestan. It combines Jewish dietary and festival practices with eastern Caucasian ingredients and techniques. Rice, wheat, lamb, poultry, herbs, beans, dried fruits, walnuts, and sour fruits appear frequently, while home cooking includes stuffed vegetables, pilafs, soups, and filled doughs. Examples include kurze-style dumplings, herb-rich rice dishes, and dolma prepared within Mountain Jewish household traditions. Recipes vary among communities and often resemble surrounding Azerbaijani and Dagestani foods, but the cultural context, holiday uses, and community-specific terminology justify treating this as a distinct shared tradition.
