A FOOD TRADITION

Naga Cuisine

Naga cuisine refers to diverse food traditions among Naga peoples in the hill regions of northeastern India, with related cultural continuities across the India-Myanmar border. Rice, smoked or fermented meats, fish, bamboo shoot, leafy greens, legumes, and local chilies are important. Characteristic techniques include smoking, fermenting, boiling, grilling, and pounding fresh ingredients into coarse pastes rather than building elaborate spice gravies. Smoked pork with bamboo shoot, axone-based preparations, and fermented fish dishes are representative examples, though practices vary substantially among communities. The cuisine is best catalogued as plural and culturally diverse.
