A FOOD TRADITION

Ndebele Cuisine

Ndebele cuisine is rooted especially in Matabeleland and Bulawayo, with strong historical and culinary connections to neighboring South African and southern African foodways. Maize meal, sorghum, beans, pumpkins, leafy greens, milk and meat are recurring ingredients, while dried vegetables and preserved meat reflect seasonal cooking. Typical techniques include cooking firm or soft porridges, stewing relishes, fermenting grain preparations and roasting or braising meat. Examples include isitshwala, a stiff maize or sorghum porridge served with relish, umxhanxa, a pumpkin-and-maize preparation, and inyama yenhloko, a head-meat dish. The cuisine also includes household variations shaped by rural, urban and cross-border exchange.
