A FOOD TRADITION
New Nordic Cuisine
New Nordic cuisine is a modern culinary movement that emerged strongly in Denmark, especially through Copenhagen's chefs and restaurants, while remaining a shared Nordic development rather than an exclusively Danish invention. It emphasizes seasonal regional produce, foraging, fermentation, careful use of overlooked ingredients, seafood, grains, and close relationships with small producers. Traditional preservation methods such as curing, smoking, drying and pickling are combined with contemporary presentation and kitchen technique. Representative preparations include reinterpreted smørrebrød, fermented vegetables and grains, malt or rye breads, and desserts using sea buckthorn or other Nordic berries. Its importance lies in reshaping Danish culinary practice and international perceptions of it.
