A FOOD TRADITION

North German Cuisine

North German cuisine encompasses the coastal, Low German, and northern inland foodways shaped by the North Sea, Baltic Sea, maritime trade, and grain agriculture. Rye bread, potatoes, cabbage, peas, dairy, pork, herring, eel, cod, mussels, and other fish are central ingredients. Salting, smoking, pickling, drying, baking, and slow stewing are characteristic techniques, often producing contrasts between preserved fish, sharp pickles, and substantial sauces. Examples include Labskaus, Grünkohl mit Pinkel, and Matjes preparations; regional fish soups and Franzbrötchen add further variety. This is a broad cultural grouping rather than a single uniform local cuisine.
