A FOOD TRADITION
Northern Ghanaian Savanna Cuisine
Northern Ghanaian savanna cuisine brings together related but distinct foodways from Dagbon, Mamprugu, Gonja, Dagaaba, and other northern communities, with parallels across the wider West African savanna. Millet, sorghum, maize, rice, cowpeas, groundnuts, okra, leafy greens, dried fish, and fermented locust-bean seasonings are important. Grains are milled into porridges or thick staples, legumes are steamed or simmered, and leafy or okra sauces are cooked with meat, fish, or dried seasonings. Representative dishes include tuo zaafi with ayoyo or other green soups, tubani, and millet- or maize-based porridges. The category is regional and overlapping, not a claim that northern communities share one uniform cuisine.
