A FOOD TRADITION
Nubian Cuisine
Nubian cuisine is associated with communities along the southern Nile in Egypt and with closely related foodways extending into Sudan. It reflects river agriculture, dates, sorghum, wheat, beans, okra, dried fish, and occasional lamb or poultry. Sorghum and wheat breads are cooked on hot surfaces, while legumes and vegetables are simmered into thick stews; communal meals and generous use of dates are important cultural features. Recognizable examples include Nubian fatta, kisra or other sorghum flatbreads, and okra-based stews often served with grains or bread. The tradition is shared across borders and varies between villages, river settlements, and urban Nubian communities.
