A FOOD TRADITION

Nuristani Cuisine

Nuristani cuisine comes from the isolated valleys of eastern Afghanistan and is closely connected to the foodways of Nuristani communities, whose traditions developed in steep terrain with limited transport and pronounced seasonality. Local cooking makes substantial use of wheat, maize, walnuts, apricots, grapes, dairy, beans, and locally available meat. Bread baking, boiling, drying fruit, preserving dairy, and preparing thick grain or legume dishes are more characteristic than elaborate spice blends. Examples include Nuristani-style maize or wheat breads, meat-and-grain stews, and milk-based porridges or soups. Names and recipes vary considerably by valley, and the tradition is better represented through ecological and cultural context than through a single canonical dish list.
