A FOOD TRADITION

Palestinian Christian Cuisine

Palestinian Christian cuisine describes food traditions of Palestinian Christian communities in towns and villages such as Bethlehem, Beit Jala, Beit Sahour, Ramallah-area villages, Jerusalem, and northern communities. It is closely related to surrounding Palestinian cooking but is shaped by church calendars, village agriculture, olive growing, winemaking, and family recipes transmitted through Christian households. Common ingredients include wheat, lentils, chickpeas, olives, yogurt, seasonal vegetables, lamb, and poultry. Representative dishes include maqluba, stuffed zucchini or vine leaves, musakhan, and festive wheat- or meat-based preparations associated with local celebrations. The tradition is internally diverse and should not be treated as a wholly separate national cuisine.
