A FOOD TRADITION

Pantaneira Cuisine

Pantaneira cuisine comes from the wetlands and ranching settlements of the Pantanal, especially in Mato Grosso and Mato Grosso do Sul, and reflects seasonal flooding, cattle culture, river fishing, and Indigenous and Paraguayan-border influences. Beef, freshwater fish, rice, manioc flour, corn, beans, and native or locally gathered fruits are important. Cooking favors open-fire grilling, iron-pot stewing, roasting, drying, and practical meals suited to rural travel and ranch work. Representative dishes include arroz carreteiro, fish preparations made with pintado or pacu, and sopa paraguaia, a firm savory corn-and-cheese bake shared across the border region. The tradition overlaps with neighboring interior cuisines but has a recognizable wetland and frontier context.
