A FOOD TRADITION

Penghu Cuisine

Penghu cuisine develops from the wind-exposed islands of the Taiwan Strait, where fishing, seasonal marine harvests, and preservation historically compensated for scarce freshwater and arable land. Seafood, seaweed, oysters, squid, milkfish, peanuts, sweet potato, and locally cultivated produce appear alongside dried and salted foods. Characteristic methods include sun-drying, salting, steaming, grilling, and simmering seafood in clear soups or noodles. Representative foods include Penghu seafood vermicelli, oyster dishes and oyster omelets, and cactus-based sweets and cold desserts associated with the islands. Penghu cooking shares ingredients and techniques with Taiwan and coastal Fujian, but its island ecology and preservation practices give it a recognizable regional profile.
