A FOOD TRADITION
Peruvian Amazonian Cuisine
Peruvian Amazonian cuisine developed in the riverine and forested regions of Loreto, Ucayali, San Martin, and neighboring areas, drawing on Indigenous knowledge and later migrant influences. It emphasizes plantains, cassava, maize, freshwater fish, river snails, jungle fruits, ajies, and aromatic leaves such as bijao. Cooking commonly involves grilling, wrapping food in leaves, smoking, stewing, and preparing fish in acidic marinades. Recognizable examples include juane, a seasoned rice-and-meat preparation wrapped in bijao leaves; tacacho con cecina, mashed fried plantain with smoked pork; and regional fish dishes such as patarashca, grilled fish wrapped in leaves.
