A FOOD TRADITION
Podhale Highlander Cuisine
Podhale Highlander cuisine comes from the Tatra foothills and the Góral communities of southern Poland, with strong connections to Carpathian foodways across national borders. It developed around pastoralism, mountain agriculture and preserved foods, using sheep and cow milk, potatoes, cabbage, barley, smoked meats and forest products. Salting, smoking, drying and open-fire cooking are central techniques. Familiar examples include oscypek, a smoked sheep-milk cheese; kwaśnica, a sour sauerkraut and meat soup; and moskole, griddle-baked potato cakes. Bryndza, grilled meats and hearty flour dishes also express the region's pastoral and highland identity.
