A FOOD TRADITION
Rhodope Cuisine
Rhodope cuisine belongs to the mountain communities of southern Bulgaria and adjacent borderlands, where long winters encouraged filling, durable foods based on potatoes, beans, dairy, cornmeal, and lamb. Cooking commonly uses wood-fired ovens, griddles, slow baking, and roasting, with sheep or cow cheese providing a strong savory character. Patatnik combines grated potatoes with herbs and sometimes cheese in a pan or oven-baked crust. Klin is a layered or enclosed pastry associated with rice, greens, pumpkin, or cheese fillings. Cheverme, a whole animal slowly roasted on a spit, appears in festive settings. The tradition overlaps with neighboring Balkan mountain cuisines rather than belonging exclusively to Bulgaria.
