A FOOD TRADITION

Sakalava Cuisine

Sakalava cuisine is associated with western and northwestern Madagascar, extending across dry savanna, riverine areas, and the Mozambique Channel coast. Rice remains important where water permits, while cassava, maize, zebu, goat, fish, shellfish, and coconut are prominent in different local settings. Characteristic practices include braising or simmering zebu and poultry, grilling and drying coastal seafood, pounding cassava leaves, and making rice-flour or coconut-based snacks. Examples include zebu romazava, coconut fish stew, and mokary, a rice-based cake or pancake. Sakalava communities are diverse, so the tradition should be treated as a broad regional-cultural grouping rather than a single uniform menu.
