A FOOD TRADITION

Samogitian Cuisine

Samogitian cuisine comes from western Lithuania, where a historically distinctive regional culture developed around substantial farm cooking and preserved foods. Potatoes, barley, rye, cabbage, curd cheese, sour cream, pork and smoked meats are central, with souring, smoking, baking and slow simmering used frequently. Food is often notably hearty and thick-textured, including the seasoned dairy spread kastinys, potato-based cibulinė soup and various forms of šiupynė, a dense mixed-grain or legume dish. Samogitian cooking also includes distinctive rye breads, porridges and festive meat preparations. Its traditions overlap with wider Lithuanian practice but remain recognizable as a regional cuisine.
