A FOOD TRADITION
Sandzak Cuisine
Sandzak cuisine refers to the foodways of the Sandzak area in southwestern Serbia and adjoining Montenegro, with close links to Bosniak, Serbian, and wider Ottoman-influenced Balkan traditions. Meals often combine beef or lamb, onions, peppers, dairy products, pastry, rice, and fruit preserves. Common techniques include baking in covered pans, simmering stuffed vegetables, hand-forming filled dough, and preparing rich syrup desserts. Examples include mantije, small baked meat-filled pastries; sogan-dolma, onion stuffed with seasoned meat; and baklava. These foods are shared across borders and communities, so the tradition should be catalogued as a regional cultural expression rather than assigned exclusively to Serbia or to one ethnic group.
