A FOOD TRADITION
Scanian Cuisine
Scanian cuisine comes from Skåne in southern Sweden, a fertile agricultural region whose foodways also reflect long historical connections across the Öresund and the wider Baltic area. Rye, wheat, potatoes, cabbage, pork, goose, dairy, apples, herring, and eel feature prominently. Characteristic methods include baking, smoking, pickling, preserving fruit, and preparing substantial farmhouse dishes from grains and pork. Examples include äggakaka, a thick savory egg pancake traditionally served with pork; gåsamiddag, a goose-centered feast; and skånsk spettkaka, a tall spit-baked cake. The tradition includes both rural household cooking and urban southern Swedish food culture.
