A FOOD TRADITION
Sharchop Cuisine
Sharchop cuisine refers to foodways associated with eastern Bhutan’s Sharchop communities and neighboring eastern Himalayan cultural zones. Rice, maize, buckwheat and seasonal greens are important staples, with chilies, fermented foods, pork, beef and dairy used according to household and local practice. Meals commonly rely on simmering, drying, fermenting and combining meat or vegetables with chili and cheese. Representative dishes include shakam paa, dried beef cooked with radish or other vegetables, phaksha paa, pork with chilies, and kewa datshi, potatoes in a cheese-and-chili sauce. These dishes overlap with broader Bhutanese cooking, but eastern ingredients, techniques and cultural context form a recognizable regional repertoire.
