A FOOD TRADITION
Somali Bantu Cuisine
Somali Bantu cuisine refers to foodways maintained by Bantu communities, especially in the fertile lower Jubba and Shabelle river regions, while recognizing substantial internal diversity and interaction with neighboring Somali traditions. Farming and river environments support sorghum, maize, beans, sesame, leafy vegetables, bananas, and other produce alongside meat and fish. Characteristic preparation includes pounding grains, cooking firm porridges, simmering vegetable or bean stews, and baking griddle breads. Representative foods include soor, a stiff grain porridge; muufo, a fermented or griddled bread; and bean or leafy-green stews served with grain staples. The repertoire is not uniform and often overlaps with broader southern Somali cooking.
