A FOOD TRADITION
Songhai Cuisine
Songhai cuisine is associated especially with communities along the middle Niger, including northeastern Mali, and shares important practices with neighboring Nigerien and Sahelian foodways. Rice, millet, sorghum, cowpeas, okra, onions, leafy plants, milk, dried fish, and river fish are prominent, reflecting both floodplain farming and pastoral connections. Grain may be steamed into couscous-like preparations, boiled into porridges, or served with deeply reduced sauces; fish is grilled, dried, or incorporated into stews. Examples include dambou, a steamed grain-and-leaf preparation, fakoye, a dark leafy sauce often served with meat, and rice with fish or vegetable sauce. Culinary vocabulary and recipes vary considerably by locality.
