A FOOD TRADITION

Sri Lankan Estate Tamil Cuisine

Sri Lankan Estate Tamil cuisine developed among communities of Indian Tamil heritage brought mainly to work in the central highland plantation economy, while also evolving through later settlement and interaction with neighboring groups. Everyday cooking centers on rice, lentils, coconut, chilies, leafy greens and inexpensive seasonal vegetables, with wheat flatbreads and robust gravies also important. Common techniques include pressure-cooking or simmering dhal, tempering spices, griddling breads and making dry vegetable preparations. Examples include parotta with mutton or vegetable curry, dhal served with rice and sambol, and vadai. It overlaps with South Indian and wider Sri Lankan foodways but has its own household and community context.
