A FOOD TRADITION

Sri Lankan Moor Cuisine

Sri Lankan Moor cuisine is maintained by Muslim communities across the island, with particularly visible traditions in eastern, coastal and urban settlements. It combines South Asian Muslim cooking with local rice, coconut, seafood and spice practices, rather than representing a single uniform regional style. Rice, beef, mutton, chicken, fish, coconut milk, pandan, cardamom, cloves and aromatic spice blends are common. Techniques include layered rice cooking, slow braising, frying, pickling and making festive sweets. Recognizable examples include Sri Lankan Muslim biryani, watalappam, and stuffed or layered roti preparations served with meat or vegetable curries. Family and festival practices differ by locality and denomination.
