A FOOD TRADITION

Strandzha Cuisine

Strandzha cuisine comes from the forested southeastern Bulgarian mountains and nearby Black Sea hinterland, an area shaped by Bulgarian, Greek, and other Balkan cultural contacts. It emphasizes seasonal greens, beans, cornmeal, pork, lamb, mushrooms, and preserved vegetables, with hearth cooking, clay-pot baking, and slow stewing especially important. Dishes associated with the region include Strandzha-style bean stews, zelnik and other filled savory pies, grilled or baked meat preparations, and festive lamb dishes. Sour, smoky, and herbaceous flavors often reflect preserved produce and mountain pasture cooking. These foods are part of a wider cross-border Thracian and Balkan repertory, so the category should not imply exclusive local invention.
