A FOOD TRADITION

Syrian Druze Cuisine

Syrian Druze cuisine is a communal food tradition found especially in the Jabal al-Druze and other Druze settlements of southern Syria. It emphasizes wheat, bulgur, lentils, chickpeas, yogurt, lamb, olive oil, seasonal herbs, and preserved vegetables, reflecting both village agriculture and connections with the wider Levant. Techniques include baking flatbreads, simmering legumes and grains, stuffing vegetables, drying fruit, and preparing yogurt-based dishes. Examples include shish barak, kibbeh variations, and mujaddara, alongside local preparations of wild greens and stuffed grape leaves. The repertoire is shared with neighboring Levantine cuisines but remains culturally recognizable through communal cooking and regional practice.
