A FOOD TRADITION

Tharu Cuisine

Tharu cuisine is practiced by Tharu communities across Nepal's western and central Tarai, with local variations extending into adjoining parts of India. It reflects wetland, forest, and farming environments through rice, maize, millet, lentils, freshwater fish, seasonal greens, mushrooms, and wild or foraged ingredients. Common techniques include pounding, fermenting, roasting over fire, smoking, and cooking foods in leaf or earthen vessels. Examples associated with Tharu foodways include dhikri, a steamed rice-flour preparation; bhakka, a steamed rice cake; and fish or snail preparations with local spices. Its ecological and cultural context makes it more specific than generic southern Nepali cooking.
