A FOOD TRADITION
Ticinese cuisine
Ticinese cuisine comes from Switzerland’s Italian-speaking canton and the southern Alpine valleys bordering Lombardy and Piedmont. It combines Italianate cooking with mountain pantry practices, traditionally using cornmeal, rice, chestnuts, beans, local cheeses, cured meats, and seasonal vegetables. Polenta cooked in a cauldron, risotto, and hearty soups are central techniques, while braising and open-fire cooking remain associated with the grotto tradition. Representative dishes include polenta with braised meat or cheese, Ticinese minestrone, and torta di pane, a bread-and-milk pudding often enriched with dried fruit and nuts. Luganighe and other regional sausages also feature prominently, although related preparations cross the border.
