A FOOD TRADITION

Tigre Cuisine

Tigre cuisine is associated with Tigre-speaking communities across Eritrea’s northern and western lowlands, escarpments, and Red Sea hinterland, with related foodways continuing into eastern Sudan. It adapts to drier environments through extensive use of sorghum, millet, wheat, pulses, dates, dairy, and available goat or sheep meat. Flatbreads and porridges are central, while grains may be fermented, pounded, or cooked into dense staples that accompany sauces. Commonly recognizable examples include kisra, a thin fermented sorghum bread; aseeda, a cooked grain dough served with sauce; and ful, seasoned fava beans often eaten with bread. These traditions overlap with neighboring Sudanese and other Eritrean cuisines rather than having exclusive national boundaries.
