A FOOD TRADITION

Tigrinya Cuisine

Tigrinya cuisine is associated with Eritrea’s central and southern highlands and with Tigrinya-speaking communities whose foodways also extend into northern Ethiopia. Its foundation is fermented teff, sorghum, or mixed-grain injera, served with thick stews and legume preparations. Clarified butter, berbere, garlic, ginger, fenugreek, and onions are important flavoring elements, while roasting, slow simmering, and stone- or pan-cooking shape the repertoire. Representative dishes include zigni, a spiced meat stew; tsebhi alicha, a milder turmeric-seasoned stew; and shiro, a seasoned chickpea or broad-bean flour preparation. Communal eating from a shared platter is a notable cultural context, though practices vary by household and locality.
