A FOOD TRADITION

Tlaxcalan Cuisine

Tlaxcalan cuisine developed in the central highlands through long-standing Nahua maize culture, pulque traditions, and later Spanish livestock and wheat influences. Maize, beans, squash, maguey, nopales, quelites, mushrooms, chiles, pork, and goat are important ingredients. Characteristic techniques include nixtamalization, comal cooking, pit roasting, fermentation of agave sap, and wrapping foods in maguey or corn leaves for steaming or baking. Tlacoyos, tlatlapas, and mixiotes are representative dishes, while mushroom and wild-green preparations reflect the highland environment. Tlaxcalan food shares much with Puebla and the wider central plateau but has a recognizable Indigenous and maguey-centered identity.
