A FOOD TRADITION

Transylvanian Cuisine

Transylvanian cuisine reflects Romanian, Hungarian, German, Jewish, and other Central European influences in the Carpathian basin. It commonly combines pork, smoked meats, cabbage, potatoes, dairy, forest mushrooms, paprika, caraway, and seasonal fruits. Soups and stews are important, while baking, smoking, pickling, and slow braising provide much of its character. Regional cooking often balances sour and savory flavors through fermented cabbage, vinegar, sour cream, or fruit. Representative examples include varza a la Cluj, a layered cabbage and meat bake; transylvanian goulash-style stews; and papanasi served with cream and preserves. The tradition is broader than any single ethnic community and overlaps with neighboring Hungarian and Slovak foodways.
