A FOOD TRADITION
Trøndelag Cuisine
Trøndelag cuisine draws on the agricultural plains around Trondheim, inland forests and valleys, and the region’s coastal settlements. Grain, dairy, potatoes, pork, lamb, freshwater fish, game, and preserved foods form a substantial base, with seasonal berries and mushrooms also contributing. Traditional cooking favors boiling, baking, curing, smoking, and long simmering, with substantial use of porridge, dumplings, and festive meat dishes. Sodd, a clear mutton-and-meatball soup, is a defining example, alongside klubb or kumpe potato dumplings and skjenning, a thin sweetened flatbread often served with festive meals. The tradition is regional but internally diverse.
